Beef and Cheese Chimichangas are the perfect easy-to-make, crispy comfort food.

Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 8 large flour tortillas
  • vegetable oil for frying

Instructions

  1. In a skillet, cook ground beef, onion, and garlic until the meat is browned. Drain excess fat.
  2. Add chili powder and cumin and mix well.
  3. Place a portion of the beef mixture and shredded cheese onto each tortilla.
  4. Roll the tortillas tightly and secure with toothpicks if necessary.
  5. Heat oil in a frying pan over medium heat and fry the chimichangas until golden brown and crispy.
  6. Drain on paper towels and serve hot.

Notes

  • Serve with salsa or guacamole for added flavor.
  • These can be made ahead and frozen for future meals.
