- 1 pound chicken breasts
- 4 slices turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup corn
- 1 cup black beans
- 2 avocados, diced
- 1 cup shredded cheese
- 1 lime, juiced
- In a large pot, cook turkey bacon until crispy. Remove and chop.
- Add onion and garlic to the pot and sauté until translucent.
- Add chicken breasts and brown on both sides.
- Pour in chicken broth, tomatoes, corn, and spices. Bring to a boil.
- Reduce heat and simmer for 20 minutes or until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot with bacon.
- Stir in black beans and heat through.
- Serve with diced avocado, cheese, and a dash of lime juice.
