  • 1 pound chicken breasts
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup corn
  • 1 cup black beans
  • 2 avocados, diced
  • 1 cup shredded cheese
  • 1 lime, juiced

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and chop.
  2. Add onion and garlic to the pot and sauté until translucent.
  3. Add chicken breasts and brown on both sides.
  4. Pour in chicken broth, tomatoes, corn, and spices. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes or until chicken is cooked through.
  6. Remove chicken, shred it, and return it to the pot with bacon.
  7. Stir in black beans and heat through.
  8. Serve with diced avocado, cheese, and a dash of lime juice.

Notes

  • Adjust the spices to your taste for more or less heat.
  • For a vegetarian option, substitute chicken with beans and use vegetable broth.
