A delicious and nutritious Cabbage Soup featuring the warmth of ginger and the savory flavor of turkey bacon.

Ingredients

  • 1 head cabbage, chopped
  • 4 slices turkey bacon
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 6 cups vegetable broth
  • 2 cups carrots, sliced
  • 1 can diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and chop.
  2. Add the onion, garlic, and ginger to the pot and sauté until fragrant.
  3. Stir in the cabbage, carrots, and diced tomatoes.
  4. Add the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Stir in the chopped turkey bacon and season with salt and pepper.
  7. Serve hot.
