  • 4 cups diced potatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until softened.
  2. Slice the Andouille sausage and add to the pot, cooking until browned.
