  • 1 head cauliflower
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the cauliflower into florets, then toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. In a large pot, cook turkey bacon until crispy, then remove and crumble.
  4. Add onion and garlic to the same pot and sauté until translucent.
  5. Add the roasted cauliflower and vegetable broth, then bring to a boil; reduce heat and simmer for 10 minutes.
  6. Blend the soup until smooth, then stir in heavy cream.
  7. Serve hot, topped with crumbled turkey bacon.
