Ingredients

  • 4 chicken breasts
  • 2 tablespoons cumin
  • 1 teaspoon paprika
  • 1 bunch kale, chopped
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • 1 cup hummus
  • 1/4 cup water
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix the cumin, paprika, salt, and pepper.
  3. Coat the chicken breasts with olive oil and then rub the spice mixture onto them.
  4. Place the chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
  5. While the chicken is baking, prepare the kale salad by mixing the chopped kale with olive oil, lemon juice, salt, and pepper.
  6. For the hummus dressing, blend the hummus with water until smooth.
  7. Once the chicken is done, slice it and serve it over the kale salad with a drizzle of the hummus dressing.
