A warm and comforting curry soup with fluffy dumplings that makes for a perfect meal during chilly days.

Ingredients

  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 cup coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup peas
  • 1 tablespoon soy sauce
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup water
  • 1 teaspoon salt

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add carrots and cook for 5 minutes.
  3. Stir in curry powder and cook for another minute.
  4. Pour in vegetable broth and coconut milk. Bring to a simmer.
  5. Add peas and soy sauce. Cook for 10 minutes.
  6. In a bowl, mix flour, baking powder, salt, and water to form a dough.
  7. Drop spoonfuls of dough into the simmering soup.
  8. Cover and cook for 15 minutes until dumplings are fluffy.

Notes

  • For extra flavor, add a pinch of chili flakes.
  • Top with fresh cilantro before serving.
