2 egg whites

1/4 teaspoon cream of tartar
1 teaspoon vanilla extract

2 cups powdered sugar (for filling)

Instructions
Preheat the oven to 300°F (150°C).
In a large bowl, combine almond flour and powdered sugar.
In another bowl, whisk egg whites until frothy, then add cream of tartar and continue whisking until soft peaks form.
Gradually add granulated sugar while whisking until stiff peaks form.
Fold the almond flour mixture into the egg whites gently until just combined.
If using, add food coloring and mix until the color is even.
Pipe small circles onto a baking sheet lined with parchment paper.
Let them sit at room temperature for 30 minutes.
Bake for 15-20 minutes; cool completely before filling.
For the filling, beat together softened butter and powdered sugar until smooth.
Spread or pipe the filling onto half of the macaron shells and top with the other halves.
