1 tablespoon vegetable oil
1 onion, diced
2 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons red curry paste
4 cups vegetable broth
1 can coconut milk
1 cup dumplings (fresh or frozen)
2 cups spinach
1 tablespoon soy sauce
1 tablespoon lime juice
2 green onions, sliced
fresh cilantro for garnish
Instructions
Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
Stir in the red curry paste and cook for another minute.
Add the vegetable broth and coconut milk. Bring to a simmer.
Add the dumplings and spinach. Cook until the dumplings are heated through.
Stir in soy sauce and lime juice. Adjust seasoning to taste.
Serve hot, garnished with green onions and cilantro.
Notes
Adjust the spice level by adding more or less curry paste.
This soup can also be made with chicken or shrimp for a protein boost.
