  • 8 rice paper wrappers
  • 1 cup cooked vermicelli noodles
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup red bell pepper, sliced
  • 1 cup fresh mint leaves
  • 1 cup cilantro leaves
  • 1 cup cooked shrimp, halved

Instructions

  1. Prepare all ingredients and set them out for assembly.
  2. Soak the rice paper wrapper in warm water until soft, about 10-20 seconds.
  3. Lay the wrapper on a clean surface and layer the vermicelli, vegetables, herbs, and shrimp.
  4. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top.
  5. Repeat with remaining wrappers and filling.

Notes

  • For extra flavor, add a sprinkle of sesame seeds inside the rolls.
  • Serve with a peanut or hoisin dipping sauce for added taste.
