Garlic Parmesan Chicken and Potatoes is the perfect easy comfort food for any occasion.

  • 4 chicken thighs
  • 1 pound baby potatoes
  • 4 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, Italian seasoning, salt, and pepper.
  3. Coat the chicken thighs with the mixture.
  4. In a baking dish, add baby potatoes and pour the remaining mixture over them.
  5. Place the chicken on top of the potatoes, then sprinkle Parmesan cheese over everything.
  6. Bake for 35-40 minutes or until the chicken is cooked through and the potatoes are tender.
