A comforting garlic potato soup that is perfect for curing hangovers.

Ingredients

  • 4 cups potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add diced potatoes, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Blend the soup until smooth. Stir in heavy cream and parsley.
  4. Serve hot, garnished with additional parsley if desired.
