  • 12 ounces rotini pasta
  • 1 cup frozen sweet corn
  • 1 packet ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 can diced tomatoes
  • 1/2 cup sour cream
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and brown the ground beef until fully cooked.
  3. Add the frozen corn and diced tomatoes, then stir in the ranch seasoning mix.
  4. Cook the rotini according to package instructions until al dente; drain and combine with the beef mixture.
  5. Stir in the sour cream and half of the cheddar cheese, then transfer to a baking dish.
