1 pound chicken thighs, boneless and skinless
1 medium onion, diced
2 cloves garlic, minced
1 head green cabbage, chopped
4 cups chicken broth
2 medium carrots, sliced
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
Instructions
Heat olive oil in a large pot over medium heat.
Add the diced onion and minced garlic, cooking until the onion becomes translucent.
Add the chicken thighs and cook until browned on both sides.
Stir in the chopped cabbage and sliced carrots.
Pour in the chicken broth and add thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Remove chicken, shred it, and return to the pot.
Serve hot, garnished with fresh herbs if desired.
