A delicious quiche recipe featuring salmon, spinach, and cottage cheese wrapped in crispy filo pastry.

  • 1 cup cottage cheese
  • 200 grams smoked salmon
  • 1 cup fresh spinach, chopped
  • 4 eggs
  • 6 sheets filo pastry
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, whisk together the eggs and cottage cheese.
  3. Add chopped spinach and smoked salmon to the mixture.
  4. Layer the filo pastry in a greased pie dish, brushing each layer with olive oil.
  5. Pour the mixture into the filo-lined dish.
  6. Bake in the oven for 30-35 minutes or until golden brown.
  7. Let it cool for a few minutes before slicing.
