A delicious and easy-to-make casserole featuring salsa verde and tender chicken.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup salsa verde
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1/2 cup corn
  • 1 tablespoon olive oil
  • 1 teaspoon cumin

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the chicken, salsa verde, rice, black beans, corn, cumin, and half of the cheese.
  3. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  4. Drizzle with olive oil.
  5. Bake for 25-30 minutes or until the cheese is bubbly and golden.
