  • 2 pounds beef chuck roast
  • 4 tablespoons salted butter
  • 1 tablespoon minced garlic
  • 2 cups baby potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Season the beef roast with salt and pepper.
  2. In a large skillet, melt the butter over medium heat and add the minced garlic.
  3. Brown the beef on all sides in the skillet, then transfer to the slow cooker.
  4. Add the baby potatoes around the beef in the slow cooker.
  5. Pour the butter and garlic mixture over the beef and potatoes.
