4 chicken thighs
1 cup long-grain rice
2 cups chicken broth
1 lemon, juiced and zested
2 garlic cloves, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 onion, chopped
1 tablespoon olive oil
Salt and pepper to taste
Instructions
In a slow cooker, add olive oil, onion, garlic, lemon juice, and zest. Stir to combine.
Place chicken thighs on top of the mixture and season with thyme, rosemary, salt, and pepper.
Add the rice and chicken broth to the slow cooker.
Cover and cook on low for 6-8 hours or until the chicken is cooked through and the rice is tender.
