  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup bell peppers, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup corn (fresh or frozen)
  • 1 cup green beans, trimmed and chopped
  • 2 cups spinach, packed
  • salt to taste
  • pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned, about 5–7 minutes.
  3. Add the chopped carrots, celery, and bell peppers; sauté for 5 minutes.
  4. Stir in the garlic and ginger; cook for an additional 2 minutes.
  5. Add the diced tomatoes, chicken broth, chili powder, cumin, and paprika; bring to a boil.
  6. Reduce the heat and simmer for 20 minutes.
  7. Add the corn, green beans, and spinach; cook for another 10 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot.

Notes

  • Feel free to add more vegetables according to your preference.
  • This soup can be made in advance and stored for later.
