- 1 tablespoon olive oil
- 1 pound chicken breast, diced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup bell peppers, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 cup corn (fresh or frozen)
- 1 cup green beans, trimmed and chopped
- 2 cups spinach, packed
- salt to taste

- Heat the olive oil in a large pot over medium heat.
- Add the diced chicken and cook until browned, about 5–7 minutes.
- Add the chopped carrots, celery, and bell peppers; sauté for 5 minutes.
- Stir in the garlic and ginger; cook for an additional 2 minutes.
- Add the diced tomatoes, chicken broth, chili powder, cumin, and paprika; bring to a boil.
- Reduce the heat and simmer for 20 minutes.
- Add the corn, green beans, and spinach; cook for another 10 minutes.
- Season with salt and pepper to taste.
- Serve hot.
