- 1 cup split peas
- 2 cups chicken broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 ounces turkey bacon, chopped
- 1 teaspoon thyme
- ½ teaspoon black pepper
- 1 bay leaf
- Salt to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for another minute.
- Add split peas, chicken broth, thyme, black pepper, and bay leaf. Bring to a boil.
- Reduce heat and simmer for 30-40 minutes or until peas are tender.
- Stir in cooked turkey bacon and adjust seasoning with salt.
- Remove bay leaf before serving.
Notes
- This soup can be blended for a creamier texture.
