Enjoy a warm bowl of healthy split pea soup made with turkey bacon and chicken ham.

Ingredients

  • 1 cup split peas
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 ounces turkey bacon, chopped
  • 1 teaspoon thyme
  • ½ teaspoon black pepper
  • 1 bay leaf
  • Salt to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery until soft.
  3. Add garlic and cook for another minute.
  4. Add split peas, chicken broth, thyme, black pepper, and bay leaf. Bring to a boil.
  5. Reduce heat and simmer for 30-40 minutes or until peas are tender.
  6. Stir in cooked turkey bacon and adjust seasoning with salt.
  7. Remove bay leaf before serving.

Notes

  • This soup can be blended for a creamier texture.
  • Feel free to add other vegetables you have on hand.
