A delicious and healthy take on a classic stuffed pepper dish, featuring turkey bacon for added flavor.

  • 1 cup quinoa
  • 2 bell peppers, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook turkey bacon over medium heat until crispy. Remove and set aside.
  3. In the same skillet, sauté onion, garlic, and bell peppers until softened.
  4. Add ground turkey to the skillet, cooking until browned.
  5. Stir in quinoa, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
  6. Transfer the mixture to a baking dish and top with cheese and cooked turkey bacon.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.

Notes

  • Feel free to substitute quinoa with rice if desired.
  • You can add more vegetables for extra nutrients.
