This Stuffed Pepper Casserole is a family-friendly dish that combines all the flavors of traditional stuffed peppers in a comforting casserole form.

  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 1 cup long-grain rice, uncooked
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef along with the onion until the meat is cooked through.
  3. Add the chopped bell peppers and cook for another 3-4 minutes.
  4. Stir in the rice, beef broth, diced tomatoes, Italian seasoning, and garlic powder.
  5. Bring to a boil, then reduce the heat to low and cover. Simmer for about 20 minutes or until rice is tender.
  6. Transfer the mixture to a baking dish, top with cheese, and bake for 10-15 minutes until the cheese is melted and bubbly.
