- 1/2 cup unsweetened cocoa powder
- 1/4 cup erythritol or other sugar alternative
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 2 large eggs
- Preheat the oven to 350°F (175°C).
- In a bowl, combine almond flour, cocoa powder, and erythritol.
- Add melted butter to the dry ingredients and mix until crumbly.
- Press the mixture into a lined baking dish to form the crust.
- In another bowl, beat cream cheese, sour cream, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cheesecake mixture over the crust.
- Bake for 25-30 minutes or until set.
- Let cool and refrigerate for at least 4 hours before slicing.
