  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup erythritol or other sugar alternative
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, cocoa powder, and erythritol.
  3. Add melted butter to the dry ingredients and mix until crumbly.
  4. Press the mixture into a lined baking dish to form the crust.
  5. In another bowl, beat cream cheese, sour cream, and vanilla until smooth.
  6. Add eggs one at a time, mixing well after each addition.
  7. Pour the cheesecake mixture over the crust.
  8. Bake for 25-30 minutes or until set.
  9. Let cool and refrigerate for at least 4 hours before slicing.

Notes

  • For a chocolate version, add melted chocolate to the cheesecake mixture.
  • Serve with fresh berries for added flavor.
